This is by far one of the best recipes I have ever made with gnocchi
Ingredients:
1 pound fresh or frozen gnocchi
2 tbsp butter
2 medium shallots or one onion
1 pound zucchini very thinly sliced lengthwise. I used one yellow and one green and I also used a vegetable peeler to slice them.
1 pound cherry tomatoes halved
1/2 tsp salt (I didn't use salt)
1/4 tsp nutmeg
Ground black pepper to taste
1/2 cup Parmesan cheese
Parsley
Directions:
Bring a large saucepan of water to a boil. Cook gnocchi according to package instructions until they float 3-5 minutes and drain
Melt butter in a large skillet over medium-high heat. Cook until the butter begins to brown about 2 minutes. Add shallots and zucchini and cook stirring often until softened, 2-3 minutes. Add tomatoes, salt, nutmeg, and pepper and continue cooking, stirring often until the tomatoes are just starting to break down. 1-2 minutes. Stir in Parmesan and parsley. Add gnocchi and toss to coat!
