Pasta with Asparagus Recipe

Pasta with Asparagus Recipe

Super simple and such a good meal idea for spring and summer!

Ingredients:

Roughly one pound of asparagus cut in 2" pieces (tough ends trimmed)

One box of favorite pasta

1 tbsp extra virgin olive oil 

3 cloves of garlic crushed 

Salt and pepper to taste

1 large egg white

1/4 cup Parmesan cheese

Directions:

In a large pot bring water to a boil you can add salt I didn't. Once the water is boiling cook your pasta the last 3-5 minutes of the pasta cooking add the asparagus. Once time is up scope out asparagus and set to the side and also reserve some of the water I ended up using about 1/2 cup. Drain pasta

In a large sauté pan heat Olive oil. Add garlic and cook until golden. I don't like the way garlic tastes when it is brown so once I can smell the garlic that is when it is the way I like it. Add asparagus, salt and pepper. If you choose to add salt remember asparagus absorbs flavor well so don't add a lot of salt. Sauté for about 2-3 minutes. 



In a small bowl combine egg yolk, parmasean cheese and 1/4 of the reserved liquid. Mix well



Now add the drained pasta back to the stock pot and mix well with the egg white mixture. Cook on medium low for about 2-3 minutes or until the sauce thickens and sticks to the pasta. Toss in the asparagus and garlic. If the pasta seems dry go ahead and add the rest of the reserved liquid I ended up adding another 1/4 cup. 


I ended up serving this with some chicken breast with seasoning on it! Very good and tasty!
