Egg Muffin Recipe

Egg Muffin Recipe

Don't let the name fool you no it's not a muffin you just cook it in a muffin tin. The recipe is perfect for the person that doesn't have a lot of time to make breakfast in the morning or for that kid that just won't get up in the morning but you want to make sure they eat something. This is a great recipe for everyone! I make them on Sunday and we eat them thru out the week. Plus you can add so many different things inside. 

The basic ingredients:

6 eggs 
1/2 cup milk
1/4 tsp salt
1/8 tsp pepper
1 cup of shredded cheddar cheese or whatever you like

Along with these ingredients I added to mine cubbed ham and spinach. 



Preheat your oven to 350

Beat eggs, milk, salt and pepper in a bowl until well blended. Add the cheese and whatever else you want to add. 

Spray your muffin tins with non stick spray and divide up mix. Mine made 8 muffins. You also could use mini muffin tins as well. 


Bake until cooked roughly 20-22 minutes. Let cool a bit before you try removing and enjoy. I store mine in the frig and when ready to eat just pop in the microwave for 20-30 seconds. 

 The ones that I added ham and spinach to came out to be 96 calories each. Not a bad deal if you ask me!
