I wanted a side dish tonight that would pair with my spicy meatloaf and be light, so here is what I did.
Ingredients:
1box Near East Rice Pilaf (you can use any brand)
1lb asparagus
1 whole tomato cubed
2-3 cloves of garlic minced
Salt and pepper (if you want I didn't use salt)
Prepare your rice according to the box
In a large stock pot bring water to a boil. Add cut up asparagus and cook 2-4 minutes. Immediately take out of pot and put into a bowl of ice water to stop the cooking.
Once rice and asparagus are cooked combine all ingredients into the rice.
You can eat warm or serve cold. Yum and super simple!
